Definitely the SubC for me, and probably the steel over the WG Smurf due to the weight and versatility, but I could get used to the Smurf 24/7.
Cheapest one watch option? If going with what I own, the Doxa 300 BL would be a weird choice, but from bracelet to rubber to nato it hits all the boxes for me and I could get used to orange 24/7. Otherwise, from what I have owned in the past, the Seiko Turtle with all the various strap options would probably get the nod.

For me least expensive one-watch would a Turtle as well 777, 779, 773 in no particular order. I'd do a sapphire conversion and that would be it.

A one-watch for me would have to be a 5 digit Rolex sports model. I would probably go Wu's route with the versatility and slim wearing GMT.
I miss the wearability of my 1675 all of the time but for one watch maintaining the 100M WR would be required.
For a low cost one watch I would probably choose a Seiko or 38mm Sinn. I like the Shogun suggestion for the versatility.

Pelagos. As much as I love my speedy, it is often forgotten because weeks go by with the Tudor. Often it doesn’t come off for sleep or showers.

116600 Sea-dweller for me. All the modern touches with a date and matte dial in a 40mm size. I enjoy how unique it is and I don’t find it overly thick or heavy at all. That or the Mark II 214270 Explorer. Just so damn comfortable.
As far as inexpensive option, Sinn 556 would be a great choice or the venerable skx007 on jubilee.

For cheapest, I've got a 1984 Oysterdate Precision 6694. Not cheap in absolute terms, but they can be found for $2,000 or less depending on condition. It's the watch that got me into nice watches - a good friend had one in college and wore it every day. I'd been casually looking for one for awhile, and found one recently in really good condition. 6694's were produced for many years, and are all over the board condition wise.
Hand cranker with a silver dial, acrylic crystal, and non quick-set date. Simple, robust movement. 100m WR.
It's probably the only Rolex you can get for less than $2,000 at this point. Only downside for some is that it's only 34mm, but I think it works fine for my wrist size. Can be dressed up or dressed down, similar to a datejust.

I'd choose either the Speedmaster Professional or the Planet Ocean 2500 as my 'one watch'. Both could pretty much do it all for me, with the PO tipping the balance due to WR. That said, I hope I never have to choose just one

I really like the NAFTS, but Seiko needs to offer an updated SKX (at least with a 4R movement) asap! For me, the size of an SKX is better for an everyday watch.

This one ticks so many boxes for me I have been wearing it as my one watch for a while now. Changing straps based on use and gtg. I am going to see how long I can make it before switching off.

I guess I'd go with my 16700 GMT Master, I hate the "II" on the dial more than a cyclops.
No mods, nothing. Just GMT and a quickset date.
Also if this actually came to pass and my one watch was a rolex, id probably have lost all my passion for watches as well and wouldn't really care to mod it anyways.
