There is virtually no chance of damaging stainless steel with nail polish or nail polish remover. Nail polish is made of polymers and solvents. Can't hurt stainless steel with cellulose, and the solvents evaporate very quickly. The most effective solvent used in nail polish remover is acetone. Here is what people who know steel very well have to say about it interacting with SS:

If you want to be extra cautious you could practice on a less valuable item. As a final thought, nail polish will not stay undamaged for very long; a coating of nail gel would work better.

I put clear scotch tape on my more expensive pieces (clasp only of course) as I’m hard on my watches and I only “rent” them for a short time anyway.
The tape is invisible and actually lasts a couple of weeks. It’s saved me a lot of work when flipping.
