Carving Knives

I know we have some serious cooks and chefs around here, so what do you recommend for a carving knife? Basically, I am looking for more consistency in my cuts, and up to this point I've been using a chef's knife.

We have a Shun Classic Hollow-Edge Slicer and a Global Carving Knife. Both good.

I'm a huge fan as well
My 8'' chef's knife is my go to piece of hardware in the kitchen.
I like how solid and balanced they are, I would take German vs Japanese any day of the week for generic all purpose work.
Agreed! Pretty much the only knife in our kitchen

I'm a long time Wustof fan too. Top of the line forged for most chopping tasks. Stamped works well for most slicing chores.

I'm a huge fan of dildos

Love Wusthof and they'll last forever but I'm the exact opposite. I do love their paring knife, though, and would recommend them all day long to an amateur cook wanting a good set.

My kit pretty much consisted of the following for 6 years and I loved them all:

-240mm Watanabe Pro Gyuto
-180mm Watanabe Pro Kurouchi Nakkiri
-Wusthof 3.5" paring

Bought a set of Globals of Ebay last year for a great price. Not a professional by any means but I love them so far. The 7" Santoku style gets a lot of use.
