Did some pickled eggs out of boredom. Will write a recipe for curried-pickled eggs next go around, if I remember.
I did a heavy aromatic batch utilizing some old pickling spice I had so they're full flavored and somewhat pungent, plus the onions and garlic are a plus for grazing. 24 eggs done. One container with 3 tablespoons of chili flake for some spice, the other regular for the kiddo.
Pickling spice, some added mustard seeds, fresh garlic, onions, dill, kosher salt, sugar, and a blend of apple cider and unseasoned (dry) rice vinegar. Fresh Turkish bay leaves from my buddies tree.
I had to make a quick Covid run for the onion and some dill. Now I wait...
